This week we spoke with Boyan Kinov, the owner of one of Malibu’s favorite sandwich spots, John’s Garden.  We picked up the inside scoop on Boyan, some of the best items on the menu including his favorite sandwich, a “secret menu” item, and a unique salad created in memory of a Malibu icon.

OWNER, BOYAN KINOV

Boyan, originally hailing from Bulgaria, is the owner of John’s Garden.  Boyan’s background in Bulgaria included education in fine arts before his move to the states.  Boyan worked as general manager of the restaurant for 6 years before eventually buying the delicious sandwich spot and health store in 2012.  He currently still acts a manager of the restaurant and enjoys his time there especially because he “gets to work with (his) brother and best friend.”  Not to mention the full time access to awesome food ;).

Boyan’s Pick – “The Surfer”

Although a tough decision as the owner of your own sandwich spot, Boyan’s favorite is “The Surfer” which is a Turkey Avocado Sandwich.  He likes to add cheese, usually pepperjack to spice it up a bit, with lettuce, tomato, mayo, and mustard along with turkey and avocado, of course.

SECRET MENU ITEM – THE IVO BURGER

Something that you won’t find on the menu inside John’s Garden is the Ivo Style Burger.  This vegetarian burger is a variation of the popular black bean burger.  Instead of the usual style of the burger, this comes with a cibatta bun with spinach, pepperjack cheese, pepperoncinis, with tomatoes, mayo and of course the black bean patty.  If you tell them at the register you want the Ivo Style Burger, they’ll know what you mean.

UNIQUE ITEM – “THE BE GOOD SALAD”

One the most unique items that you will find on the menu is the salad called the “The Be Good.”  This salad has grilled salmon on a bed of baby greens with parmesan cheese, grape tomato, orange cubes, capers and pine nuts served with olive oil and balsamic vinegar.

What makes this salad really special is how it came to be.

Kinov created and named this salad after the late Steve Ridgway, the former cashier at John’s garden for 37 years.  Steve became the face of John’s Garden and a local icon in Malibu for his famous line, “Be good out there,” that he would say to customers as they exited the restaurant.  Kinov says that Steve was a fish lover so it only made sense to include fish in the item created in his memory.
